Refrigerator pickles! Pickle barrel style!

I posted somewhere about "Cowboy Candy". Here's a simple recipe for pickle-barrel refrigerator pickles.

Pickling liquid: Equal parts of rice wine vinegar, cold water, and white sugar (little less or a little more depending on taste). Recipe below uses 1 cup of vinegar, 1 cup water, and ~ 1 cup sugar.

One "regular cucumber" or 3-4 smaller English cucumbers, one sweet onion (Walla Wall are good, but so are Candy Onions). All sliced thin. Dissolve sugar in vinegar and water mix. Pore over veggies in a glass container. Refrigerate several hours or overnight. Adjust recipe as you desire. Stir occasionally to make sure everything marinates. Can keep for 3-4 days (will be gone before that!)
 
My lady pickles carrots and radish.
Learned it from a Mexican gal who makes picked carrots and opinion.
They dont tell me how to makem.

Oh, MAN!!! Does it ever end?? Wife just brought in two baskets that are almost a bushel each of green tomatoes. Been canning ripe tomatoes and blackberries and tomatillos almost daily since June!!!! Weather turned cold (from triple digits to the 60's & 70's in one week!) Pulling out the veggies so we can dry them and then shred them. Also, to regenerate the planters and soil that isn't going in the composter, along with the shredded vegetation. I've pickled about a dozen pints of green tomatoes and 4 quarts (or will today!). Making another batch of green tomatillo enchilada sauce. Also found a recipe for green tomato hot dog relish and one for sweet relish using green tomatoes. Any green tomatoes left after that are getting thrown out!!

National Weather Service is predicting a relatively minor winter but an early one with snow likely here in Wenatchee in October. Also, a nasty Spring in late Jan., Feb., and March! But my friends at NOAA say that the staffing cuts under Musk really cut their efficiency to make accurate predictions! So, who knows??
